Dry Chicken

So, earlier this weekend I decided to cook a chicken, yes a whole chicken. I wasn't planning on using it as a main course for a meal or anything. My plans were to use its meat in breakfast burritos, to make sandwiches, and to use it in whatever needed some meat throughout the week. Since I wasn't entirely sure on what it was going on/in I decided to boil it with some subtle spices to enhance, yet preserve, chickens rare flavor (note my sarcasm).
All said and done I began picking the meat off the bone and putting it into a bowl to refrigerate. While doing this I couldn't resist snacking so I had a few bites... And it was dry!
So My question to you guys is how can chicken cooked in a COVERED pot full of WATER be DRY?

honestly though why would you BOIL a chicken of all things. Cook it first, boil the carcass later for chicken stock or chicken soup. I'd prolly oven fry it or roast it first so that the meat will taste better. pick the larger parts off the bone and then after that boil the carcass so you can get the remaining parts off the bone. Leads to a better tasting chicken overall :D

I know you were boiling it and you can't boil a chicken with a beer can in it...but if you bake it or grill it in a can of beer in it the chicken will be the best damn chicken you have ever eaten.
